      Not only did this lemon cake look exactly as on the photos, but it tasted great!! Perfectly moist on the inside and tasting of natural lemon (not artificial, as store-bought ones often taste like). My husband loved it too!! I did bake it for 60 min instead of the 40-45 recommended in the recipe, but every oven is different. This one's definitely going to be a regular in our house.

    Emilie, I love your list but was truly disappointed to see your comments. It became clear that at least for 2 recipes you had not tried them yourself. When looking for recipies, I feel infinitely better when the reviewer actually tested a few of vanilla cakes, for example and picked the best. You appear to have selected them just by liked how they looked and sounded to you.

        I made the chocolate peanut butter (his choice). It turned out so good! I did a mix of coconut flour, spelt, and almond flour because I like a break from wheat. I also substituted half stevia, half brown sugar for the sugar. This recipe adapted perfectly. We had the neighbors over and it was a hit. I went a little nuts with chocolate chunks and grated chocolate on top, because chocolate. ;) I can't wait to try some more of these.

    I hope you can help me, I am trying to avoid sugar. I think these recipes look great. Everytime I use stevia extract, the texture is dry, doesn't rise very little, I know a bit of fiber needs to be added, applesauce, or something similar. What am I doing wrong? Aquafaba maybe? Please let me know. I am a vegan newbie, I love baking, but cakes are pretty gross. I don't have trouble with cookies,I need help with cakes. Hope you can help.

    I have tried several vegan cakes ,with stevia extract instead of sugar, I know I need to add a filler, either applesauce, yogurt, or fruit juice. For some reason they end far too dense., almost ddownright gross. Usually, I don't have too much trouble with vegan cookies, with the stevia extract. Do you know how I can improve my cakes. I'd like to bake some of yours, but I'm worried that they won't be right unless I know the right ratio of stevia and filler. I hope you can help me.
